Arctic Char

Reared above 2500 feet in the cold mountain waters of the Yukon, Icy Waters Ltd. Arctic Char have some of the highest levels of Omega 3 and vitamin D found in salmonoids. It is renowned for its delicate taste, beautiful colour and firm texture. Through careful management of our char, we have avoided antibiotics, and are developing organic feeds.

Our DFO certified brood stock supplies eggs for the production of fish twice per year, guaranteeing a constant supply of firm-fleshed fish year round. Our char are raised in the constantly flowing, pollution-free Arctic waters ranging from 20°C in the summer to minus 50°C in winter.

Salmon

Creative Salmon, established in 1990, is one of only a few premium growers of Chinook salmon in Canada and the world. Taking great pains to ensure top quality from egg to harvest, Creative Salmon has established an enviable reputation for high quality Chinook salmon. Applying the highest standards in the world, we raise salmon in a healthy, safe, and environmentally friendly way, serving the most discerning clientele across Canada, the USA, and Japan.

The clear, cold, unpolluted waters of the North Pacific Ocean off the coast of British Columbia provide the pristine environment for the growth of our naturally raised indigenous Chinook (King) salmon. Diets consist of fish meals and organic grains. Feeds are produced using by-products of fish used for human consumption. The diet of fish meal and fish oil produce salmon rich in Omega 3 and Omega 6 fatty acids, the superior fats that help prevent heart attacks.

To ensure the welfare of our fish, the Five Freedoms are met: freedom from malnutrition, freedom from injury and disease, freedom from fear and distress, freedom from unnecessary restriction on behavior, and freedom from thermal and physical discomfort. Our salmon are raised at a low density in large, expansive enclosures.

Creative Salmon follows sustainable farming practices that generate economic benefits while respecting our employees, the community, the environment, and the fish we grow. Continuous monitoring of the environment around salmon farms ensures minimal environmental impacts.

Environmental impacts are minimized by following a site-fallowing plan. We operate only four of our six farm sites at any one time. This system allows us to rotate among sites, and provides for fallow periods of up to several years. Even active sites have fallow periods of three to four months between stockings. The fallowing plan, guided by results of our environmental monitoring program, allows the sea floor to return to its natural condition.

No antifoulants are used on nets. Net cleaning is achieved by power washing with seawater or by natural means, such as exposure to natural ultraviolet sunshine!

Salmon are harvested using continuous flow pumps and state of the art flow-through pneumatic stunning equipment. Once aboard the harvest vessel, fish are chilled in circulating slush ice where core temperatures reach near zero Celsius before the fish arrive at the processing plant in Tofino, British Columbia, approximately ten kilometers from the farms.

Primary processing takes place at a Canadian government certified plant, owned and operated by Lions Gate Fisheries Ltd. A skilled crew of mainly First Nations people eviscerate, wash, grade for quality and size, and pack the salmon in approved totes with fresh ice, ready for transport.

All processing and distribution facilities are HACCP approved and federally inspected by the Canadian Food Inspection Agency.

Atlantic Halibut

Eating farmed halibut makes sense. Our farming has minimal impact on the environment, is non-threatening to wild fish in the area, and produces halibut healthy to eat, and delicious.

Atlantic halibut farming is highly sustainable. The fish come from a domesticated brood stock taken from the wild, and held in a hatchery. Since these brood fish can reproduce many times, the wild stock is not diminished. As a result, after a short while we get many more fish than the original number. Also, because the fish convert food to protein so efficiently, there is actually a protein gain achieved in growing fish in a farm situation. Another benefit involves the fact that the species is native to the east coast of North America. Therefore, if they happen to escape, they will actually enhance the wild population.

Fish is a superior health food, an excellent source of protein. Farmed halibut benefit from the controlled environment and diet. They are not exposed to parasites as are wild fish; they are resistant to most of the diseases that affect salmon; and they do not attract the sea lice that afflict farmed salmon. Therefore, they avoid medications. Moreover, since farmed halibut are not large fish compared to wild halibut, they have not had time to ingest heavy metals.

We sell our fish fresh, harvesting them only when we have an order. We do not hold them while a vessel steams into port. Nor do we freeze them at sea or on shore. There is no long distance transport from some other part of the world. Our carbon foot print is very small, and we are working to reduce it even more.

Raised in their natural environment – the cold clean waters of the North Pacific – the Black Cod is an excellent source of Omega 3 fatty acids, high quality protein, iodine, phosphorus, magnesium, copper, iron, zinc and calcium. The fats are highly polyunsaturated and therefore well suited to a low cholesterol diet. No medication, hormones, or colouring agents are ever used.

Brown Oyster Mushrooms

Trinity Farms Brown Oyster Mushrooms

Trinity Farms in Ancaster, Ontario, has supplied Sheridan Specialties with oyster mushrooms for over 17 years.

Our brown oysters have three outstanding virtues: excellent flavour, tender stems, and low moisture content. Their sweet, delicate flavour makes them particularly suitable for sauces, pastas and stir-fries. Tender stems mean a totally edible product, minimizing preparation time, and maximizing value. Low moisture content ensures the mushrooms not only absorb flavours from other ingredients but also have long shelf life.

Trinity Farms oyster mushrooms are grown on Ontario maple sawdust, enriched with a mixture of natural ingredients, such as wheat bran and soy meal. When moistened with clean well water and formed into logs, this mixture mimics the trees on which the mushroom grows in the wild. Later, beautiful mushroom clusters emerge from these logs in growing rooms that replicate conditions found under a forest canopy.

Food safety and traceability are designed into a system that requires no pesticides or other chemicals. Complete control of the process from sawdust pile to packed mushrooms is in our hands. Constant attention to purity and cleanliness allows us to meet the exacting needs of both the mushroom and today’s food industry.

Wild Mushrooms

Sheridan Specialties’ wild mushrooms come from numerous suppliers.

All our wild mushrooms are natural and organic, picked in their wild natural habitat.

The hedgehog mushroom, a hearty North American variety, is sweet and nutty with a slightly crunchy texture. The flesh will remain firm when cooked.

Black Trumpets are summertime mushrooms that grow in large clusters beneath oak trees in damp deciduous woods. Their rich nutty flavour and unique texture make them perfect for French cuisine.

Slegers Greenhouses, a family owned farm in operation since 1987, is located in Strathroy, Ontario, just west of London.

Slegers Greens – organically certified since 2004 – has produced salad greens for twenty-two years. Our greens are sold still living, with roots intact.
