Berkshire pork is renowned for its richness, texture, marbling, juiciness, tenderness and overall depth of flavor. It is thought by many to be the Kobe beef of pork. It is said to have a very specific taste, not generic and bland or mild like regular pork.
Nagano Pork is a premium product developed by Lucyporc in Yamachiche PQ 18 years ago to cater to Japanese customers seeking a choice product that met very specific quality standards. Nagano pork boasts exceptional tenderness, juicy meat and greater moisture retention while cooking. Lucyporc is a farm-to-fork brand controlling every aspect of production with a view to reducing the stress on the animals – premium feed, no hormones, low stress transportation methods, and hand cutting. The production method means that the pork, like beef, can be aged, which it is for a minimum of 10 days, which improves the flavour of the meat. The quality of the meat is so high that Sheridan has just got approval to start a dry-aged program.
